The 2015 growing season started a few weeks later than usual due to
unusually high snowfall through the winter which delayed spring by a
couple weeks. Spring was dryer and warmer than usual which allowed
the vines to make up for the late start but kept the crop to a reasonable
level. Summer and autumn were fairly average with autumn rains
holding off until very late in the season leading to a particularly clean
This wine was fermented in stainless steel to maintain clean, fresh fruit
flavours. The wine was fermented with four different yeasts from
Switzerland, France, and Germany. Components of the wine were
fermented dry to add citrus notes and highlight minerality, while the
bulk was stalled with natural grape sugar giving complex tropical notes
and low alcohol. The wine was also oxygenated during ferment to
improve body and ability to age.
The nose shows notes of pear, starfruit, mango and lime, with cinnamon
spice, and chalky minerality from our terroir. The palate is clean and
crisp with a touch of spritz that leads to a long citrus finish.
Suggested Food Pairings:
This wine pairs well with almost any food, but is best enjoyed with
Asian cuisine, Tex-Mex, or grilled seafood.
