2015 Stubborn Head
Crafted from estate grown L'Acadie Blanc grapes fermented and aged in oak barriques. This wine pairs well with rich seafood or strong cheeses.

The 2015 growing season started a few weeks later than usual due to unusually high snowfall through the winter which delayed spring by a couple weeks. Spring was dryer and warmer than usual which allowed the vines to make up for the late start but kept the crop to a reasonable level. Summer and autumn were fairly average with autumn rains holding off until very late in the season leading to a particularly clean harvest.
This wine was fermented and aged in second and third fill Hungarian oak barriques (225L barrels) for ten months. The oak barrels add a toasty butterscotch note to the wine while improving mouth feel through micro-oxygenation. Fifteen percent of the wine was fermented in stainless steel to add fruit character and balance the oak in the final blend. Bâtonnage (stirring of the lees) was carried out every 2 weeks, until the wine was ready for bottling, to add more weight to the palate.
The nose shows notes of ripe peach and pear, with notes of butterscotch and cloves from the oak. The palate reveals notes of ripe fruit, with toasty oak and fresh baked bread from the lees stirring. The finish shows clean fruit, spicy oak and chalky minerality characteristic of our estate terroir.
